OPTION   #1:

  1. Using the selection of fresh greens make a salad.   Toss your salad with this homemade dressing…

1 tsp. poppy seed                    3 tsp. Dijon mustard                 3/8 tsp. garlic salt

1 T. apple cider vinegar          2 – 3 T. honey                             1/8 tsp. salt

1 T. freshly squeezed lemon juice     ½-3/4 c. plain yogurt     freshly ground pepper

Mix all ingredients together until well blended.

Garnish with some sliced fresh strawberries.

  1. To go along with the fresh salad make a recipe of your favorite Queso.  When making your Queso you will want to consider some of the cheeses from South Mountain Creamery.  I highly recommend the “lightning jack cheese” as it adds depth and a good amount of heat.  Bump up your Queso by adding some ground beef….browned off and seasoned….delicious!  Nothing beats fresh and homemade.
  2. Now for something sweet…I know you see them…there they are….the first strawberries of the season. Let’s put together a strawberry pizza…

 

First the crust….Mix together and press into a pizza pan…

1 ½ cups flour, 1 ½ sticks butter, melted, ½ – 1 cup chopped pecans, 1 T brown sugar

Bake in 350 degree oven 10 -15 minutes.  Cool completely

For the filling…Mix together… 1 ( 8 ounce) softened cream cheese with 2 c. confectioners sugar

Fold in 1 ( 8 ounce ) container whipped topping   [ or make your own from heavy cream]

Spread this creamy filling over top the cold crust.  Arrange some fresh strawberry slices on top

of the creamy filling.

For the sauce on top…. Make a strawberry sauce to garnish the top by combining these ingredients…  1 pint strawberries, ¼ cup sugar, 1/3 cup water, 2 T. cornstarch.  Drizzle overtop.
